1.2 dl whole milk
0.8 dl cane sugar
1/2 tsp vanilla extract or vanilla sugar
1 tsp coconut oil
1.2 dl rice flour
1 l ice cream
corn starch or potato starch
food coloring (optional)

1. Start by scooping ice cream on to plastic wrap. Shape it into a ball and twist a piece of plastic wrap around it. Let them harden in the freezer for about 2 hours. 

2. Simmer milk, cane sugar and vanilla extract/ sugar on a pan until the sugar has dissolved. Then add the coconut oil and if you want to make it colorful, add food coloring. 

3. Slowly add the rice flour onto the pan. Make sure that you are mixing it while adding only a little bit of the flour at the time. 

 4. Increase the heat to medium heat, then mix the paste until smooth (It will look clumpy, but keep mixing patiently until the paste becomes fully smooth) 

5. Dust the surface of a table with corn starch or potato starch. This is going to make the dough less sticky and more stretchy.

6. Flatten and flip the dough a few times. When the dough is cool, cut it into circles big enough to fit the ice cream.

7. Take the ice cream balls out of the freezer. Remove the plastic wrap and put the ice cream on top of the mochi dough pieces that you cut earlier. Shape them with a piece of plastic wrap similar to the method used with the ice cream and put them back in the freezer for a while. 

8. Remove the plastic wrap and enjoy
